Alsifra Srl is a consultancy company, specialized in the dairy sector.

It’s literally born from La Mediterranea that, with its brand Mandara, is the global leader in the buffalo mozzarella business.

Alsifra can draw on Mandara’s experience to have all the knowledges that are necessary to guide throughout the phases involved in the constitution of a buffalo mozzarella factory, from the start-up phase to the actual production, standing by the new factories along the years.

Alsifra is entitled to Mandara’s patent, the only process that makes possible to produce a fresh buffalo mozzarella anywhere in the world.

The buffalo Mozzarella

Well known as the “white pearl from Campania”, buffalo mozzarella is characterized by a strong tradition and culture in the field of Italian cheeses.

Buffalo mozzarella is a fresh, soft, semi-elastic textured cheese that belongs to the “pasta filata” family. 

Typically, cheese made with buffalo milk are higher in protein, lower in cholesterol and higher in calcium than cow’s milk.

The first historical documents found regarding buffalo mozzarella are dated in the twelfth century in the area of Capua, where the cheese was offered together with a piece of bread from Saint Lorenzo’s monks to pilgrims.

Alsifra’s team is composed of Alberta, Silvia and Francesco Mandara, the 3rd generation of buffalo mozzarella producers.

After having studied and worked abroad and in Italy, the siblings decided to apply what they learnt to the dairy sector and introduce a new dimension to their years long family tradition.

He takes care of the layout’s planning and contacts with suppliers in the start-up phase.

Responsable of the quality laboratory, guides the efficient enstablishment and management of the internal laboratory.

Buffalo Mozzarella
Making Mix®

It is concentrated buffalo milk to be delivered frozen and reconstructed with fresh buffalo milk, water or ferments.

Being buffalo mozzarella a fresh cheese with a shelf-life of 30 days, very soon La Mediterranea’s top priority became to find a way to overcome this limit to fully meet the expectations of foreign markets. 

The process that Mandara patented consists in depriving the fresh buffalo milk of around 55% of its water at a cold temperature.

The outcome is extraordinary: the reconstructed milk presents the same organoleptic and nutritional characteristics as the fresh one!

TRANSPORTATION
MAXIMISATION

Being concentrated, when in need of a certain quantity of fresh buffalo milk, one pays for the shipping and storing of half the quantity needed. The milk will then be reconstructed prior to its usage

SUPERVISED
PRICE

Milk’s price depends on the market and it is discussed every few months, with the concentrated milk La Mediterranea can assure two prices per year (Jan - Aug & Sept. - Dec).

CERTIFIED
QUALITY

Quality of concentrated milk is high and constant , thanks to the concentration process the milk can be standardized assuring the same quality over time.

LOW CARBON
FOOTPRINT

The milk is ecological , it implies an efficiency in the consumption of petrol while delivered.

LONG-TERM
EXPIRY DATE

Being frozen, concentrated milk can be stored and used when needed. With a shelf life of 2 years.
